Oksana’s Granola

Fuel your day with fibre, healthy fats, and crunch.

This is a brilliant way to work more nuts and seeds into your diet for long-lasting energy and satiety. A perfect prep-ahead breakfast or snack to enjoy with yoghurt and fruit. The mix of oats, nuts, and seeds provides complex carbs, fibre, and essential micronutrients, while a small amount of natural sweetener and nut butter gives it that toasty, indulgent crunch.

You can tweak this recipe endlessly, switch up the nuts, add dried fruit, or stir through some chopped dark chocolate once it’s cooled.

Ingredients (makes approx. 1.2kg)

Ingredients by Volume & Weight

  • Jumbo oats (organic if possible) - 1 litre or 400g

  • Mixed nuts (almonds, hazelnuts, pecans, chopped) - 2 cups or 200g

  • Pumpkin seeds - 2–3 tbsp or 25g

  • Chia seeds - 2 tbsp or 20g

  • Odourless coconut oil - 4 tbsp or 60g

  • Natural sweetener (maple syrup, honey, or agave) - 2–3 tbsp or 40g

  • Almond or peanut butter - 1–2 tbsp or 20g

  • Sea salt - ½ tsp

Optional extras (add after baking):

  • Dried cranberries

  • Raisins or chopped dried apricots

  • Dark chocolate chips

Method

1. Mix Dry Ingredients
In a large bowl, combine oats, chopped nuts, pumpkin seeds, and chia seeds.

2. Melt Wet Ingredients
Gently warm coconut oil, sweetener, and nut butter in a small pan until melted and smooth. Taste and adjust sweetness if needed.

3. Combine and Bake
Pour the warm mixture over the dry ingredients and stir well to coat everything evenly.
Spread out onto a baking tray lined with parchment. Sprinkle sea salt on top.
Bake at 180°C (350°F) for 20–30 minutes, stirring every 5–10 minutes until golden brown and toasty.

4. Cool
Let it cool completely on the tray before transferring to a container.

5. Add Extras
Once cooled, mix in your chosen extras such as dried fruit or dark chocolate.

This granola is naturally rich in vitamin E, magnesium, and healthy mono- and polyunsaturated fats from the nuts and seeds, with complex carbohydrates to keep your energy levels steady throughout the day.
